Regional Resources

So i'm working on my STBH submod.

I require certain advice for a certain "resource" mechanic.

In short: What does each Region produce? (Preferably narrow it down to duchy or county level.)
From the ashes a fire shall be woken,
A light from the shadows shall spring;
Renewed shall be blade that was broken,
The crownless again shall be king.

Pretty much all guess work, but still:
North: Sheep and wool I'd imagine - it's based on the North of England. Some fishing on the coast, also lumber and beer.
Riverlands: Fish and Crops
The Vale: Ore of some sort, large-scale agriculture in the valleys, fish and trade on the coast
Westerlands: Gold, Silver, Trade
The Reach: Food, food, and more food. Also wine.
The Iron Isles: Fish and Iron, but not a lot of anything.
The Stormlands: Fish, food, lumber
The Crownlands: Food, lumber, other stuff.
Dorne: Spices, Fish, Glass, Wine
Here is a link to my personal list of FAQs. Please check there to see if it answers you question. The specific details aren't up to date, and I probably won't update it for a while, but the general ideas are unchanged.

I can recall some dornish chapter mentioning fruits, specifically oranges. Maybe also olives. To me, Dorne looks much like (a somewhat stereotyped) South-western Spain: fertile little stretches of cultivable quite productive land, and great extensions of desertised hills/mountains.

more interesting would be to guess what kind of resources does the Free cities and Essos in general produce. My guess are livestock for lhazareen and the like. Quarth and everytigh east of it seems like a sophistified Dorne, so add to it spices silk and such things. The bone mountains probably have plentifull of stones. The summer islands? Fish, vegetables, farming goods. There is no more specific economic feature I can think of.

I'd change your list a bit EDAP. For top level production rates first that are more likely to end up sold in the capital.

North: Furs, Wools, Tin, Copper, Lumber.
Vale: Iron, Copper, Tin, Silver, Stone (Stone is hella important for castle building), Clay
Westerlands: Trade is not a production.
Iron Isles: Drop the Iron. Those tiny islands prolly don't produce any metals of any kind that are traded. Most likely Fish is the only resource they produce. While the rest is stolen from others during raids (Could be anything).

Everything else I agree with you on.

Great Wyk has extremely productive Iron Mines that have enabled house Goodbrother to become somewhat rich for Iron Islanders...which has resulted in them being looked down upon somewhat by other Iron Islanders.

I'd also add peat moss in the North, I think that could make sense. And for the Vale, I think that something animal-related could make sense, such as meat and dairy (from cows, goats, and sheep, mainly). I don't know what category they would fall into in a game, though.
